If you have to take a video of really slow processes (e.g. the motion of the sun and stars, the blossoming of flowers, etc.), then you have to know how to do time-lapse photography. If you’re using a digital camera (which we bet you are), you also have to know how to make a time-lapse movie using video editing software. The good news is that it’s very easy to learn both.
